It’s Not Exactly Quiche, But It’s Breakfast.

I made Breakfast Pie in 20 minutes

Get these things:

  • Plain Greek yogurt
  • Self-rising flour
  • salsa/Chipotle/pico de gallo
  • eggs
  • black pepper
  • butter
  • shredded cheddar


1. Turn on the oven to 400F.


2. Make dough from 1/2 cup each of yogurt & flour in a big ol mixing bowl. Mix it with a fork, spoon, fingers, I don’t care.


3. It’s sticky, so have another 1/4 cup to sprinkle under and over the dough as you roll it out or push it flat.
3b. It’s awesome to have a bowl with a bottom about the same size as your baking pan so you can pop it outa that bowl and pop it inta that pan. See size comparison in pic.
3c. My pan is one of a set that is for baking layer cakes. Mmm… Layer cake.

4. Grease that pan the easy way with that cheap generic veggie spray in the cabinet (questionable which veg from whence it came).


5. Carefully move the dough from bowl to pan while you pretend you’re in front of a plate glass window with hungry and chilly sidewalk spectators, one of them softly playing the accordion, one of them with their hair in a big bun.
5b. I put hands on both edges of the dough, center it over the pan and gently drop it, then push down the edges into the sidewall to make a fat crust edge.


6. Stick crust in the oven for 8-10 minutes or until it’s nearly dry but totally done and not brown. Like when you get somebody new making your breadsticks at that $5 pizza place and you have to bake them more when you get home.


7. While you wait on the crust, mix 2 eggs and a splat or two of chipotle or whatever. I also put two cranks off the black peppercorn mill. You could put ham, sausage, spinach, etc. In addition or instead. Surprise me.


8. Put away those dishes and ingredients you’re done with.


9. You did set the timer, right? Take the crust out and pour your egg mix on top, then put it back in the oven for 5 minutes.
9b. Check two things.
Are the eggs wiggly? Bake 3 more minutes.
Is the crust already brown? Cover the edges with foil before you bake it more.


10. Take pie out a sec to put cheddar on top. A little, a lot, you decide. Bake 3-5 more minutes, depending on how brown you want your cheese.


11. Take it out, turn off the oven like you didn’t do last time and take pictures from a 30° angle and post on the Internet.


12. Put it on a plate to cut it so you don’t scratch up your pan. You gotta bake me a layer cake with that later.
